The Serpis Classic 55 was the first absinthe with red colouring. The anise flavour is comparatively decent, what indicates the use of anise (Pimpinella anisum) and not the often used star anise (Illicium verum).

„SERPIS is a high-thujonic Spanish traditional absinthe, distilled since 1890 in the Valencia region. Only selected ingredients are used during the careful preparation. The fiery red color has always stood for his extraordinary temperament.
SERPIS comes in two variants: SERPIS ABSINTH CLASSIC contains anise, up to 10 mg thujone/l. and 55% alc.
SERPIS ABSINTH DRY is anise free, contains up to 35 mg thujone/l. and also 55% alc.
SERPIS CLASSIC ABSINTH is best enjoyed in the classic absinthe ritual or diluted with ice water (ratio 1:5).“

Evaluation:

Serpis 55 is a good absinthe for beginners as well. Not as sweet as some of the others; has a nice dry bite at the end. A friend of ours nick-named it \'Red Wallace\' (even though this absinthe is from Spain) because of its colour and strong kick. Very enjoyable; highly recommended!
